Healthier snacking

I love to eat snacks! Every now and then I do eat something unhealthy, but for the most part I try to stay healthy, also when snacking. Today I will share with you my favorite snacks. Try to think simple, it doesn’t always need to be complicated to stay healthy!

–  Veggies dipped in hummus

– A protein smoothie

– A green juice

– Raw nuts mixed with sun dried fruits

– Dates! Just as they are or filled with a nut butter

– Home made energy balls

– Fresh berries and fruits

– Rice cakes with avocado or nut butter

– Guacamole with veggie chips

– Dairy free yogurt with granola and berries

Creamy sweet potato soup

Don’t know what to make for dinner? Then I will tips you about this delicious soup. It’s filling, plant based and nutritious. Sweet potato is a real beauty food for your skin, is super rich in vitamin-A! Vitamin-A, also called Retinol, is nr. 1 anti aging ingredients in the skin care industry. If you don’t care too much about skincare, I’m sure you still love eating tasty food!

This is what you need for 3-4 portions:

1 big sweet potato (590 gram)

150 gram carrots

1 cane of coconut milk

2 cloves of garlic

1/2 onion

1/2 red chili

a thumb of ginger

3 tbs red curry paste

4 deciliter vegetable broth

Cilantro to decorate

Salt and lime to serve with the soup

Direction:

– Use 1 – 2 tsp of the cream on the top of the coconut milk as oil and put it in the pan. Saute the onion for about 1 min, add the chili, ginger and garlic and saute for a other 1 min, add the curry paste and stir around for one more minute before you add the rest of the ingredients. Let it cook for about 20 – 25 min until the potatoes are soften.

– Put the soup in a high speed blender and mix to you get the perfect creamy consistency.

– Serve the soup hot with some cilantro and lime on top.

Lemon coconut energy balls

Want something sweet, but yet healthy? Then this recipe is for you. These little bites are packed with good-for-you ingredients, they are easy to make and take no time. They are raw, vegan, gluten free and absolutely tasty!

These balls are the perfect pick-me-up snacks if you are one the go and need something fast to boost your energy, or if you just want a little “indulgent” treat. They are filled with cashew nuts that will boost you with healthy fat and give them a nice crunch, dates that have a significant amount of fiber and add a delicious sweetening to them, lemon that is a great source of vitamin-C and add a zesty flavor, coconut that give them that tropical taste, and salt to enhance and balance all the flavors.

For this recipe you will need:

75 gram raw cashew nuts

80 gram Medjool dates

20 gram shreeded coconut (unsweetened)

1/2 tbs lemon zest

1 tbs lemon juice

pinch of pink salt or sea salt

Instruction:

1. Add the cashew nuts to a food processor and pulse a few times to they re chopped.

2. Add the dates and the shredded coconut and pulse to it all is nice combined.

3. Add the lemon juice, the lemon zest and  the salt and mix until everything come nice together and you are left with a dough.

4. With slightly damp hands, scoop out heaped teaspoons of the mixture and roll into balls, then roll each ball in the remaining shredded coconut.

5. Store them in an airtight container in the refrigerator for up to 1 week (never gonna last that long in my home, haha). Or put them in the freezer for up to 12 weeks.

Monday’s healthy tips

Hello Monday! I hope you all had a fantastic start on the new week, loaded with new energy. Today I wanted to share some of my breakfast recipes that I absolutely love! Specially at this time of the year when it’s cold outside. I’m very much a smoothie kind of girl when it comes to breakfast, but when it’s very cold outside I prefer something warm. For me, oatmeal is the way to go! It is loaded with fiber that helps you keep full during your morning. Also what I love about oats is that the variations are endless! You can mix it with superfood, berries, nuts and seeds or whatever you prefer. Below I share two recipes I really like. They are nutritious and delicious (and vegan).

Coconut-berry oatmeal

Recipe:

  • 2 dl oats
  • 4 dl water
  • cinnamom
  • 1,5 cup of mixed berries (rapberries & blueberries)
  • pinch of pink salt
  • 1/2 sliced banana
  • shredded coconut
  • pumpkin seeds

Cook up the oats, berries, salt and the cinnamon with the water. When it’s finished, top it with sliced banana, shredded coconut and pumpkin seeds. So delicious!

Apple cinnamon oatmeal 

Recipe:

  • 2 dl oats
  • 1 dl organic apple sauce
  • 1 tsp cinnamon
  • 1 tsp coconut flower sugar
  • 1/2 apple finely chopped
  • some water to cook

Put everything in a pot and cook it until you have the right consistency. I served it with some chopped apple and a little bit of maple syrup on top.

Welcome November

Hi guys! I hope you all are doing fine and enjoying life. Wow, I can’t believe we are already in November now, times flies by so fast! Today I want to share with you my goals for this month. I love making weekly and monthly goals. For me it’s a great way to reflect over things in my life; what I appreciate, what I wanna work on, and discover some new goals I wanna achieve. My goals always change. They all depends on were I find myself mentally and physically, and what energy level I have. It’s a good way to get to know yourself better and listening to your body.

1:  Getting back on track with my healthy eating habits

During the time here in Barcelona, I have been eating out a lot. It has been more wine and a little more unhealthy food than what I usually eat. Indulging every now and then is okay, but I do like to have a balance that makes me feel good. Also, the kitchen in this apartment makes cooking very limited. We don’t have a stove or much kitchen equipment. I miss my kitchen so much! But, no excuse right?

2: Reading books

I am not a person that just finish one book after another, I have to admit. But I do like to read, and especially this time of the year when it’s cold outside (yes, it gets cold in Barcelona too, haha). The next book I wanna read is by Dr. Nigma Talib, a naturopathic skin care and health expert. I have read it before, but it’s so good, I just love all about it!

3: Listening to more podcats

Recently I started to listen to some podcasts. Why haven’t I done that before? I love it! I’m sure you can find podcast about everything, so whatever matches your interests. These days I’m listening to a woman named Kimberly Snyder, who also is a health and wellness expert. I do have two of her books and I love her philosophy about health and wellness, so inspiring! What I love about podcast is that you can listen anytime; when going for a walk, training, cooking, while doing your makeup etc. You should try it!

4: Freshening up my makeup bag

Yes, the Holiday season is right around the corner, which means a lot of events and parties! What I love about Christmas season is that you really can play around with glitter and more heavy makeup looks than the other seasons. I do have a list of makeup products I wanna try out, so I will definitely make reviews on that later on.

5: Spending time with my family and my love

Yes, I’m actually going home in the end of November for a long weekend. It’s a reason I have to go back home, I might tell you guys later. But, I do get a few days to enjoy with my family and boyfriend. At that time it will be 7 weeks since last time I saw him, and I’m missing him like crazy already… Just thinking of him surrounding me with a hug makes me all jiggly inside! It’s crazy how much impact another person can have on your feelings, don’t you think?

That is my top 5 goals this month. I hope this might gave you some inspiration to makes some new goals and achievements.

Hi guys! I hope you all are doing well. This night my head just wouldn’t fall asleep at all. The last time I took a look at the watch it was 5 am!! Anyways, I did get up 8.30 am to spend as much time as I could with my parents, who arrived yesterday. I’m so happy they are here so that I can get one week of quality time with them, yay! Only thing is that I have to go to work in the hospital at 15.00.. But we did had a great morning together. It started with a delicious breakfast at their Hotel. After that I showed them La Rambla, the big tourist street here in Barcelona, and we went all the way down to the beach. The weather has been absolutely perfect today. The sun is shining and I have been feeling energized (even with so few hours of sleep)! Before I had to go to work we went for a lunch at one of my favorite restaurants, Enkel. I had this delicious Buddha bowl and a detox green juice. That’s what I call a perfect lunch.

Well, now it’s 22.45 pm, and I will try to get some sleep (finger crossed). Have a good night.

Where to eat in Barcelona

I have now been in Barcelona a while and I have been trying out some various restaurants by now. So if you are a foodie and want to know some great places to eat here in Barcelona, just keep up reading my friend!

First of all, I should mention that I eat mostly a plant based diet that doesn’t include any meat or fish. I also try to stay away from diary as much as possible. My choices of eating like I do, won’t be the focus on this post, let’s talk about the restaurants. Don’t worry, these places I’m gonna mention does not only serve vegan or vegetarian food!

Flax and Kale/ Teresa Carles

The reason I put these two restaurants under one, is because it’s the same owner and the same kind of style when it comes to the food and the place. These two places must be my favorites! These places are both very popular places, always people, but you don’t have to wait forever to get a table. The food is really fantastic! The menu is not only for vegetarians. I have only tried the vegan food and wow, they really know how to make food taste perfect. What I really can recommend is the taco from Flax and Kale, that is made out of a special fruit that replace the meat. Even my non vegetarian boyfriend loved it! The service is great, very friendly and kind. The price is good too. These restaurant’s is the perfect breakfast spot or a nice dinner  with friends or as a dating place (they have good wine)! Enkel

Enkel is the restaurant that is just under our apartment, that’s how we found it, hehe! It’s located in the gothic quarter, kind of hidden in one of the many small streets in this area. The restaurant’s looks kind of trendy and it has a cool vibe to it. The waiters is so kind and friendly and the price is good. The food is so amazing! Since it is so near, I have been there many times, tried different things, and every time I get surprised about how freaking good the food is! I guess that’s why it is so popular and always have people there. They have both meat, normal burgers, fish etc, and also a very good vegetarian friendly menu. The Buddha bowl is fantastic, so is the goat cheese salad. They serves fresh juices that is perfect if you go there for breakfast, or tasty wine if your out dining. Well, hello beach vibes! If you having a beach day and want some energy between sunbathing and playing in the waves, this is the place for you. It’s located right next to the beach and they have a big area outside, so you can enjoy your food while you’re listening to the ocean. The food is really good. Again, not only for vegetarians, but they have a great menu if you are plant based. For sure the best Acai bowl I have had so far! The price is good and the people are nice. It’s a very popular place, so you might have to wait some minutes to get table if you come around lunch time. Check out their side here.

Before moving to Barcelona I did search over my social media to look for vegan friendly places to eat. This was the one I found on Instagram, their profile looks amazing, so it was a sure thing that I got to try this place when getting here. They have 3 or 4 restaurants, I have been to two of them. Both times I had to wait about at least 30 min before getting a table. The place looks very cozy and cute as you see with all their flower decorations outside. My expectation to this place was kind of high! And who walked out disappointed? Yes… The food wasn’t that wow at all. Actually I couldn’t finish my vegan burger because I didn’t find it tasty (and let me tell you, I’m one of those persons that eats EVERYTHING, of course not now when I’m plant based, but you get the point). The service wasn’t that good, of curse, they constantly have a 30 min line of hungry people outside their door. The price was good though. If you want a super cute Instagram photo, this is your place. But, if you want good service, tasty food and more relaxing environment, this is not your place. Check out their side here

If you ever go to Barcelona and try out some of these places, I hope you’re pleased with my recommendation. It’s plenty of places to eat here, and I still have 8 weeks more, so it might come up more tips on that front later on.
